Our potato merchant is G W Marsay of Stokesley who provides us with the best potatoes available (Farm Assured certification) . We store the potatoes above ground in a heated area which is kept at a constant 15 degrees Celsius. This keeps the core temperature of the potato at 6 degrees Celsius or above. Once the core temperature of the potatoes drops below this temperature they start to turn their starch into sugar. The sugar in them caramelises when heated and they turn dark in the chip box and taste sweet.

PotatoesFor chips, a floury potato is the best option as they have soft, dry textures when cooked. Waxy potato varieties such as Charlotte and Maris Peer do not fry too well as they don’t absorb enough of the beef dripping and actually taste greasy. Floury potatoes such as King Edward, Romano and Desirée fry much better, but the undisputed chip king is Maris Piper in our view. At certain times of the year Maris pipers aren’t available so we usually fry, Estima, Pentland Dell, or our big summer favourite - Maris Bard. One way of testing what type of potato you have is to mix one part salt to 11 parts water in a dish and put the potato into the solution. If it's a floury type it should sink to the bottom and if it's waxy it should float....well that's the theory anyway. If it floats it should be on a salad, if you are a salad lover – stop reading |
Crinkle Cut Chips
Crinkle cut chips are back on the menu ! This style of chip became unpopular years ago due to them not being seen as healthy as straight cut chips. However, times have moved on and we can fry at higher temperatures nowadays with modern beef dripping, resulting in most of it going back in the pan We are the only shop in the Guisborough area selling traditional crinkle cut chips. The chips are prepared fresh each day on the premises with our trusty Crypto Peerless F2F chipper. This is the only commercial chipper made to cut crinkle cut chips and they are like hens teeth to find. |
